Before launching Civico 47, Matteo spent four years as Executive Chef at Pilu at Freshwater, working side by side with Giovanni to help build one of Sydney’s most respected Italian dining rooms. This time, Giovanni is stepping into Matteo’s kitchen, and the result promises to be a heartfelt celebration of friendship, mentorship, and the beautiful regional diversity of Italian cuisine.
