David’s transition from a professional career in engineering to the art of distillation was driven by a desire to create premium spirits that capture the unique essence of the Top End. The distillery specializes in traditionally distilled gin, vodka, and whiskey, often incorporating native Australian botanicals that reflect the region’s natural heritage and cultural landscape. Located in the light industrial area of Winnellie, the cellar door and cocktail bar offer an sophisticated atmosphere where craftsmanship meets community. As the first in the NT to utilize a traditional pot still, single-shot distillation process, Willing Distillery has become a pioneer in the Territory’s burgeoning craft spirits industry.
