Seven Seeds Coffee Roasters was founded in 2007 by Mark Dundon and Bridget Amor, two figures synonymous with the rise of specialty coffee in Australia. Based in Carlton, Melbourne, the roastery and cafe are named after the seven seeds smuggled out of Yemen by Baba Budan, which supposedly introduced coffee to the world. Seven Seeds is deeply committed to transparency, sustainability, and supporting the producers they work with through direct trade relationships. They focus on micro-roasting high-quality, seasonal beans to highlight the unique characteristics of each origin. The Carlton flagship, housed in a repurposed warehouse, offers a minimalist yet welcoming environment where coffee is the star.
